Crock Pot Pork Chop Dinner

Ingredients:
4-6 pork chops, trimmed and bones removed
1 recipe stuffing, prepared
1 recipe apple pie filling, prepared
Layer pork chops in the bottom of the crockpot so that they are touching. Cover with stuffing. Top with apple pie filling.
Place lid on crock pot and set the timer for 3-4 hours, just until pork is cooked through and still tender. My crockpot only has high and low, so I end up cooking mine for about 3 hours on high.
Remove lid and dig in!!!!
Stuffing Recipe
via my Mom and Grandma before her :)
Ingredients:
half loaf of bread, cubed and set out in a large mixing bowl
1/4 of an onion, diced
1 1/2 stalks celery, diced
2 Tbsp. butter
1/2 tsp. poultry seasoning
1/4 tsp. salt
dash black pepper
1/2 c. chicken broth
Melt butter in a skillet over medium heat. Add celery and onion and cook until golden brown, about 8 minutes.
Sprinkle poultry seasoning, salt, and pepper over bread cubes.
Stir cooked onion and celery mixture into the bread cubes, adding chicken broth and stirring until it begins to look like stuffing.
Set aside until ready to use in your recipe.
NOTE: May double this if you desire more stuffing. Also, feel free to use leftover bread. I've used heels, hamburger buns, hot dog buns, whatever is handy and cheap.
Homemade Apple Pie Filling
Ingredients:
6 fugi apples, peeled, cored, sliced
3/4 c, white sugar
3 Tbsp. flour
3/4 tsp. cinnamon
1/2 tsp. nutmeg
4 Tbsp. butter
Toss prepared apples into a bowl with sugar, flour, cinnamon, and nutmeg until well coated.
Melt butter in a skillet over medium heat. Add apple mixture and cook for about 5 min, until syrup begins to form and apples are tender. The key is to use a large enough skillet so that the apples are in a thin layer which will cook down faster.
Set aside until ready to use in your recipe.
NOTE: Much like the bread, use whatever apples you have on hand. I recently made this with some HUGE apples that a friend gave me and only needed two. You need about 4 regular sized apples, so use more or less depending on the size of the apples you plan to use.
